Honey & Red Chilli Glazed King Prawns with Egg Fried Rice

Ingredients:

200g King Prawns

1 Red Chilli or Sweet Chilli Sauce

Honey

A small piece of Ginger

3 Spring Onions

Soy Sauce

Half a cup of Rice

2 Eggs


Instructions

1) Grind the chilli, ginger and honey into a paste using a pestle and mortar or blend in food processor.

2) Add a little soy sauce to the paste and mix together.

3) Pour the sauce over the prawns and stir until all the prawns are evenly coated, then leave to stand for fifteen minutes.

4) Put rice in saucepan and cover with boiling water (about 1 cm above the rice) and cover. Cook for 10-15 minutes.

5) In a separate pan, break the eggs and stir until cooked through.

6) Heat a large frying pan on a medium-high heat and once hot, pour the prawns and sauce and cook for 3-4 minutes.

7) Once the rice is cooked, drain any excess water. Mix eggs and rice and stir in some more Soy sauce.
